- Breakable blade used for opening food boxes.
- Operator to switch box cutter to solid blade, not breakable blade.
- Food Safety Plan/Sanitation Plan
- Hot holding is below 60°C.
- Operator to ensure a minimum of 60°C is kept for potentially hazardous food being hot held. Staff took correction during the inspection. Comments Cold holding units keep food below 4°C/40°F. Foods are dated/covered and sored correctly. QUAT sanitizer is at required concentration. Liquid soap, hot water, paper towels are provided at designated hand sinks. Hand sink has been replaced in near prep area (it was removed in last inspection). Temperatures are monitored and recorded daily (Ensure sanitizer concentration is recorded). Food safe equivalent person on site during inspection.
