    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • ** - Repair required in the following areas that are not only structural deficiencies under the Food Regulation (not constructed in a manner that is smooth, cleanable, nonabsorbent, durable) but may also be contributing to breeding areas for the flies: 1. the wall behind the dishwasher in the kitchen is in poor repair. The wall was partially closed up - yet to be sealed with silicone. 2. the metal and gaps around the mop sink are in poor condition and are no longer sealed up. The metal is no longer adhered properly to wall or step surfaces, allowing for water to infiltrate and provide the breeding area that the flies need to proliferate. Improvement noted, some areas to repair remain
    • 23. Is the facility maintained in a clean and sanitary condition?
      • ** - the bar walls under and behind shelving were much better with sanitation however: buildup of liquids, foods, etc. was observed in hard-to-reach areas. Thorough and regular cleaning required. The same is required under and behind the ice machine. ** - thorough cleaning of all drains, drain caps, areas around drains, and pipes, and the floors and walls around those drains. Must be done daily to aid in abatement
