Immediate disinfection and cleaning required.** - thorough cleaning of the buildup, the liquid, the dirt, the grease, etc. required: the bar floors, shelving, all cupboards, walls under equipment, hard-to-reach areas, the glass upside down sprayers, the pop gun (was filthy), the sinks, etc. The kitchen cleaning required under all sinks, the dishwashing area, behind and under all sinks and walls that are located behind the ice machine and all plumbing.

      • A tray of sushi marked with a time stamp of 12:30pm is observed to be on the counter at a temperature of 20 degrees Celsius at 2:36pm. Ensure that potentially hazardous food items, such as sushi, are not left at room temperature for more than two hours. The operator discarded the tray of sushi during the inspection.

      • No thermometer is observed in the small "Insignia" cooler in the front service area. Ensure that the indicated cooler is equipped with a thermometer.
    • 20. Do food handlers at the facility have adequate food safety training?
      • No valid food safety certificate is observed. Ensure that a valid food safety certificate is provided to the inspector.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1. A large gap is observed between the floor and the wall in the walk-in freezer.2. The cabinet below the handwashing sink in the front service area in the kitchen is observed to be in disrepair and is no longer smooth and easy to clean. 1. Ensure that the gap is sealed to render the surface smooth and easy to clean. 2. Ensure that the indicated area is repaired.

      • A small amount of grime is observed inside the ice machine. Ensure that the ice machine is cleaned and sanitized. The operator cleaned and sanitized the ice machine during the inspection.
