    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Small flies were observed in the bar service area and on the walls in the back of house. The facility has a pest control company providing biweekly service; please continue to follow all pest control recommendations.Enhanced cleaning and sanitation of all food contact surfaces must be maintained, and all food, drink and alcohol dispensers/spouts should be covered to prevent fly access.

    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The hand sink on the right-hand side of the main kitchen entrance was blocked by a movable food cart. The staff member was instructed to relocate the cart. Hand sinks must be easily accessible at all times.

      • Dirt accumulation was observed on the wall of the hand sink beside the dough mixer and on the wall of the spray sink in the dishwashing area.

      • 1. Soap and paper towel were not available at the handwash sink located across from the grill.- Designated handwash sinks must be properly supplied at all times.2. A designated handwash sink at the main bar was filled with beverage containers.- Designated handwash sinks must be kept empty and used solely for handwashing purposes.

      • Utensils (spatula/tongs) stored in a solution of quat sanitizer located by the grill were not fully immersed in the solution.- Ensure that the food contact portion of the utensils are fully immersed in the sanitizer.

    • 23. Is the facility maintained in a clean and sanitary condition?
      • REPEATED VIOLATION- Dry Storage room: clean floor and corners in this area. July 13, 2023 Food debris was found under shelving. The operator was told to sweep the room including under the shelves daily and mop at least once a week. Ensure that floors are cleaned and sanitized to prevent the accumulation of food that can contaminate food and attract pests. Add increased frequency of cleaning to the cleaning checklist to ensure the tasks are completed regularly.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • 1) Hard to reach areas behind coolers, under dishpits, and besides shelving units had accumulation of food debris and dried on food. The areas included the equipment in The Shed upstairs and bar as well as areas in the 3-10 kitchen. Ensure hard to reach areas are cleaned and sanitized regularly to prevent the accumulation of food debris that can contaminate food and attract pests.
