      • Damp cleaning cloths were observed in various areas of the facility. No Sanitizer solution was prepared at the time of the inspection.A 100-ppm chlorine residual sanitizer solution was prepared and cloths were submerged.
    • 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
      • Tapioca is being held at room temperature for 4 hours and then discarded. To get approved for this length of a time, facility is to apply for Time as a Public Health Control.Until application is approved, Tapioca is to be stored for a maximum of 2 hours and then discarded.Alternatively, once prepared, the tapioca can be hot held above 60 degrees Celsius at all times.

      • Sanitizer test strips were not available for testing sanitizer solutions.

      • There was a residual/growth on the lip of the ice machine.Please cease the use of the ice machine, fully clean and sanitize according to manufacturer's instructions. Use outsourced ice until equipment is sanitized.
