- Quat sanitizer was too strong (hadn't been diluted from concentrated product). To be at 200-400ppm unless rinsed off afterwards if used on any food contact surfaces. Product was diluted during inspection.
- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- Glasswasher was not dispensing correct level of sanitizer. Switched to iodine from quat during inspection and now dispensing 12.5ppm iodine during rinse cycle.
- 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
- Require iodine testing strips for checking the glasswasher to ensure is dispensing 12.5-25ppm during the rinse cycle.
