- F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
- Observation(s): Operator stated they are not sanitizing counters and dishware. They are using soap and then rinsing dishes off. Informed operator this is unacceptable and that all food contact surfaces must be cleaned using the three step process. This practice must occur immediately as approval was based on many things, including the proper sanitizing method. Sanitizer dispenser measured at 200-400 ppm QUATs - good. Inform all employees, signage to be provided. Sinks are labelled wash/rinse/sanitize.
- F2.3B Manual dishwashing procedure must provide sufficient washing and sanitizing action to remove contamination.
- F2.3C Clean in place warewashing procedures must provide sufficient washing and sanitizing action to remove contamination.
- F2.3D Sanitizer solution must be available and kept at the correct levels for adequate sanitizing action.
