      • Ranch dressing was found past its best before date (June 15, 2023) in a dirty original container. Corrected during inspection. PHI directed the operator to discard the ranch dressing at the time of inspection.Thousand Island and Italian dressing were both found past their best before dates, April 4, 2022, and May 12, 2023, respectively. Corrected during inspection.       • Observed multiple, wet used cleaning cloths mounted on countertops. Corrected during inspection. Please store cleaning cloths in sanitizer solutions when not in use to prevent contamination of food contact surfaces. Bleach sanitizer was 1000ppm as detected by Chlorine test strips. Corrected during inspection. Coached Operator on mixing an approved sanitizer solution, 100ppm Bleach sanitizer.       • Partially cooked bacon was being held at room temperature. Operator stated they were letting it cool to separate the pieces. There was no timer gauging cooling time. CDI: bacon moved to oven for further cooking.

      • 1) The hood unit on the cooking line has not be maintained since 2020. The operator stated that the company has been contacted to arrange for maintenance. Proper maintenance of cooking hood units prevent contamination of foods and "build up of various constituents in equipment such as range hoods also poses a fire hazard" (Alberta Food Code 2020).

      • 1. Several containers used for food storage in the sliding door cooler were broken or in poor repair. ACTION REQUIRED: sort through all small wares and discard any in poor, broken condition. 2. Bowls were used as scoops and left in bulk foods when not in use. ACTION REQUIRED: discontinue using bowls as scoops. Obtain scoops with proper handles. Store the scoops in such a way that the handles are not in contact with the food product. 3. Facility was using newspaper to line counters/shelving. ACTION REQUIRED: discontinue using newspaper to line shelving.
