    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • 1. In the standing refrigerator beside the entry door, raw eggs were stored above vegetables.- Operator placed raw eggs below the vegetables.Ensure not to store raw eggs above or in close proximity with vegetables, cooked or ready -to-eat food items.2. Raw meats were observed on the top shelf mixed with various produce, above ice packs and buns in the standing refrigerator inside the storage room.- Operator re-arranged the food items and placed the raw meats below the produce and ready-to-eat items.Ensure not to store raw meats (including poultry), fish, seafoods above or in close proximity with cooked or ready to eat food items. Arrange and dedicate shelves to store them to prevent potential cross-contamination.3. Scoops were stored inside flour and rice containers.- Operator removed the scoops from the containers.-Ensure that scoops are stored in such a manner that the handles do not come in contact with food.4. Cases of canned soda drinks were observed to be placed directly on the floor in the storage room.- Operator moved items away from the floor.Ensure all food items are stored at least 6 inches off the floor.

      • The storage room was observed to be cluttered.- Clear the clutter, remove unnecessary items. Arrange and organize the area properly.A facility where food is being prepared must be maintained in an organized manner for easy of cleaning and to prevent pest harborage.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Chlorine sanitizer solution was measured at 600 + ppm. - Ensure to mix the chlorine solution at the food safe concentration of 100 ppm. Mix half teaspoon of unscented household bleach per liter of water. Verify concentration using chlorine test strips.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • No pest monitoring program in place. - Develop a pest monitoring program or hire a professional pest control company to set up a program. Maintain records on-site for review.
