      • Corrective Action(s): Empty ice machine for full cleaning and sanitizing. Discussed with staff - this must be done at least once every 2 weeks. Machine needs to be shut off and emptied for proper cleaning.

      • Observation (CORRECTED DURING INSPECTION): QUATS sanitizer for food contact surfaces measured over 400ppm. This is too strong.
      • Corrective Action(s): The QUATS chemical used is meant to be diluted. Operator added water and diluted down to 400ppm.

      • Observation: Hot water supply to high temperature dishwasher is not enough to meet the minimum temperature for sanitizing. After 8 runs, maximum temperature reached is 68.2C.
      • Corrective Action(s): CORRECTION ORDER ISSUED.
      • Service the dishwasher IMMEDIATELY. High temperature dishwasher must reach at least 180F/82C at the manifold to properly sanitize.

      • Observation (CORRECTED DURING INSPECTION): Two plastic containers of raw meat stored in the 2 door reach in cooler measured to be 8C. Ambient temperature of this cooler measured to be 9.3C.
      • Corrective Action(s): Move all potentially hazardous foods into the other working prep coolers. Do not store anything in this cooler other than bread and whole vegetables until it can be fully replaced.

      • Observation: Significant amount of rodent droppings and signs of activity noted in the following areas:
      • > Under the shelving racks by the back door
      • > Under the dishwasher
      • > Downstairs storage area - under the shelving racks, next to the chest freezer
      • Corrective Action(s): Remove droppings.
      • > Clean and sanitize the affected areas with a bleach solution.
      • > Inspect for any entry points (holes or gaps in the walls, ceilings, baseboards, etc.) and seal them immediately.

      • Observation: Storage areas are cluttered. Clutter can facilitate rodent activity/
      • Corrective Action(s): De-clutter and organize the following areas:
      • > Next to the dishwasher by the back door
      • > Downstairs storage under the stairs
      • Any equipment that can be stored on shelves must be stored on shelves. Do not store equipment directly on the floor unless it is too big to store otherwise.

      • Observation: The following equipment are not in good working order:
      • 1) High temperature dishwasher - does not drain, staff are manually draining the unit between uses.
      • 2) Reach in cooler - air temperature measured 9.3C.
      • Corrective Action(s): Operator is aware of both issues already. New dishwasher has been ordered but needs to be intalled. Operator claims reach in cooler is not being used for raw meats and that there are plans to replace the whole cooler.
      • Dishwasher cannot continue in this manner for more than another week. It must be replaced ASAP - correction order will be issued for replacement.
      • Reach in cooler MUST NOT be used to store potentially hazardous foods until there is a new unit in place.

      • Observation (CORRECTED DURING INSPECTION): Discussed manual warewashing procedures with operator. Food grade sanitizer was not being used after washing and rinsing.
      • Corrective Action(s): All food contact surfaces must be properly sanitized. For manaul warewashing, this involves submerging all equipment/utensils in the sanitizer solution for 2 minutes. Use bleach to make a 100ppm solution, or obtain more QUATS.

      • Observation (CORRECTED DURING INSPECTION): Handsink next to the cook line was missing paper towels at the start of inspection.
      • Corrective Action(s): Staff provided more paper towels. Ensure all handsinks are fully stocked at all times.

      • Observation (CORRECTED DURING INSPECTION): One container of meat was taken from the freezer and left to thaw on the counter in room temperature. Surface temperature of the meat was measured to be 4C.
      • Corrective Action(s): Staff moved the container into the cooler. Do not thaw in room temperature. Frozen food must fully thaw in the cooler or under cold running water in the sink for a faster thaw.

      • Observation: Cleaning for rodent droppings is required in the following areas:
      • > Under the 2 storage racks in front of the back door

      • Corrective Action(s): Clean and sanitize as per your sanitation plan. Remove all stored equipment or items around the storage racks to properly access for cleaning. Monitor for any new entry points for rodents.
