- F1.2 Are proper temperature controls maintained to ensure safe storage and display of foods?
- Observation(s): Hot dogs were being improperly hot held and were approximately 22°C when measured. Operator indicated these had been out for more than 2 hours.
- F1.2A Potentially hazardous foods must be stored or displayed at a temperature of 60 °C (140 °F) or hotter.
- F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
- Observation(s): The bottles of sanitizer and rinse aid were empty in glasswasher at the front bar area. No sanitizer was measured after running the machine
- F2.3A Mechanical dishwasher/glasswasher must provide sufficient washing and sanitizing action to remove contamination.
- F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
- Observation(s): F2.5B: -There is a continuous buildup of a yellow liquid in the sealed light cover on the roof of the walk-in cooler. Operator must ensure this leak is investigated and addressed. -The hole in the roof above the rear food handling area needs to be properly sealed. F2.5K: Ensure scoops have handles and are properly stored to prevent food contamination. *CDI*
