      • Observation(s): Staff stated they only washed utensils with soap and water. Staff were educated on the need for sanitizing after washing with detergent.
      • F2.3B Manual dishwashing procedure must provide sufficient washing and sanitizing action to remove contamination.
    • F3.1 Does the operator have a valid operating permit or approval to operate?
      • Observation(s): The facility is preparing and cooking hot dogs and taquitos for immediate consumption without health approval. Operator to provide EHO with application.
      • F3.1B Operator must have health approval to operate.

    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): In the back room, the ice machine was not being maintained in a sanitary manner. Allowing dirt and grime build up can lead to an increased risk of contamination of the ice. Operator stated the ice machine was not in use and was to be removed from the premises at an unknown date. Operator was informed that this unit needed to be unplugged so the ice can melt, preventing any potential use of the food. Microwave was observed in an unsanitary state as there was grime along the inside walls and ceiling. Allowing grime build up inside the microwave can increase risk of contamination of food products that use the microwave. This observation was relayed to the operator over the phone, who stated it would be cleaned by staff. The pop syrup rack in the back was observed to be in an unsanitary condition, as well as syrup residue on the wall behind the shelf. The food residue and dirt buildup can attract pests and increase the risk of contamination of the food product. Operator stated this would be cleaned as part of cleaning schedule.
      • F2.5A All equipment, utensils and food contact surfaces used on the premises must be kept in good working order to ensure the sanitary handling of food.
      • F2.5E Equipment or materials not required for food related operations must be removed from the premises.
    • F3.4 Are written sanitation procedures (Sanitation Plan) current and available on site?
      • Observation(s): Operator was unable to provide a written sanitation plan for cleaning / sanitizing the Slurpee and F'Real machines. A written / printed copy of sanitation procedures, available for staff, assist in sanitary operation of the equipment. Operator stated he would have printed copies of sanitation procedures ready for follow-up inspection to be performed on June 30 2021.
