      • The concentration of the chlorine in the 2-compartment sinks for sanitizing dishes measured at 0ppm. Operator reconstituted and measured at 100ppm.-Ensure chlorine used for dishwashing is at 100ppm to ensure adequate sanitizing of dishes
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Few flies were present in the kitchen.-Keep food covered when not attending to it-Ensure to consult with the pest control company on contract to eliminate the flies

      • The following areas had dust and dirt / grease build-up in the kitchen:1. floor under the shelves in the dry storage area2. ventilation canopy and wall at the kitchen.3. floor under the Island preparation table-Clean the indicated areas
