Food storage surfaces must be smooth, non-porous, and easily accessible cleanable.Untreated wooden pallets were used for storing foods in the walk-in cooler. Untreated wood materials are non-porous, and uncleanable thus unsuitable for use in food establishment. - Seal all wooden shelving and pallets with a food-grade, non-toxic finish, or replace them with stainless steel or food-grade plastic shelving that is smooth, non-absorbent, and easily cleanable.

Cleaning equipment was stored improperly in the same area, creating environment for pest harborage.Dispose of all garbage bags, used drink bottles, and milk jugs. Move all cleaning equipment to a designated janitorial area. Place clearly labeled recycling bins for temporary storage of recyclable bottles and jugs.

      • The unused sink hole on the back kitchen food preparation table was covered up using cardboard and tape. This renders the surface uncleanable. Remove cardboard and tape from the sink hole. Use a smooth, non-porous, cleanable material for closing off access to the sink. Ensure there are no gaps between the table surface and the added material.

      • Paper towel was not available at the hand sink. Paper towel roll was stored was stored on the food preparation table. Operator indicated paper towel does not fit into the dispenser.Replace paper towel dispenser or provide paper towel that fits into the dispenser.

Several full garbage bags were observed by the backdoor within the food premises. Several recyclable bottles and cartoons were stored in the kitchen environment. Operator stated that waste disposable company had missed their pickup scheduled dates. Operator has contacted them to remind them of garbage pickup. Waste, refuse and recyclable materials should be removed from the food establishment at a frequency that will minimize insanitary conditions that attract or harbour insects and rodents. Generally, these materials must be removed daily.
