- Corrective Action(s): Prepare Quat sanitizer so it is 200 ppm. Sanitizer that is excessively high in concentration can contaminate food contact surfaces.

- Corrective Action(s): Clean up droppings and sanitize all affected surfaces on a regular basis. Ensure all food prep surfaces are cleaned and sanitized each morning before starting food prep. Remove unused equipment from the premises to reduce clutter and allow easier cleaning. Consult pest control services as necessary. Seal gaps and holes if observed. Correct as soon as possible.

- Observation: Mouse activity observed in both dry food storage pantry rooms. Droppings noted (moderatet) on floor along walls and behind legs under shelving in both pantry rooms. Droppings noted on and in containers on shelves in cool pantry. No notable activity observed in kitchens.
- Corrective Action(s): Get Pest Control in on more regular basis to trap and block access points as discussed.
- Clean and sanitize food trays and equipment covered with mouse droppings in cool pantry.
- Get bread in containers to protect from contamination and pest access.
- Discarded adultered bag of pasta.
- Remove cardboard under food containers on shelves as they are not intended to be cleaned, and can't be easily cleaned.

- Observation: Build up of mould and dust etc. noticed on the compressor and electical wiring conduit in the walk-in cooler.
- Corrective Action(s): Clean the compressor and othe interior surfaces to remove dust and mould etc. Cooler must be throughly cleaned at least every two weeks. (By Feb. 20, 2018)

- Observation: Dishwashers in Green and Brown pod kitchenettes were not in use as they have been Out of Order for a couple of weeks.
- Alternate dishwashers in other pods are being used to wash and sanitize the dishes.
- Corrective Action(s): Both of the above dishwashers must be repaired immediately.
