      • Observation: High temperature dishwasher was serviced but improperly. There is still a lack of of a rinse cycle.
      • Corrective Action(s): Service the dishwasher so it is able to perform a rinse cycle and the rinse temperature is at least 71°C at the plate level (180°F at the gauge). Manually rinse and sanitize all dishes, utensils, equipment, etc. as instructed previously. Correct as soon as possible.

      • Observation (CORRECTED DURING INSPECTION): 1. Dishwasher is unable to sanitize dishes, utensils, and equipment due to the lack of a rinse cycle.
      • 2. Some sanitizer spray bottles measured 0 ppm Quat and one was used to sanitize the meat slicer.
      • Corrective Action(s): 1. Manually prepare 200 ppm Quat sanitizer in nearby sink and submerge all dishes, utensils, and equipment in this sanitizer for at least 30 seconds after washing them in the dishwasher. Allow these items to air dry before using.
      • 2. Manually prepare 200 ppm Quat sanitizer in spray bottles. Verify concentration using test strips.

      • Observation: 1- Food debris on the floor noted in walk-in freezer and walk in cooler. Floors on both units and under shelving require deep cleaning. 2- walk in freezer door sil rubber noted with build-ups and possible black mold. Door seal also has torn in some sections.
      • 3- Oil and build ups observed throught the kitchen, above and around frying baskets on the back splash. Some food old build ups noted under electric oven and dishwasher unit.
      • Corrective Action(s): 1&2 -Thoroughly clean and sanitize floors in both units. Shelves could use some cleaning as well. Clean and sanitize door seals and repair/replace rubber seal where required.

      • Corrective Action(s): 1- Replace the plastic tray top so that it is easily cleanable.
