- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- 1.Operator indicated that vinegar was used to clean surfaces instead of bleach. Vinegar is not an approved sanitizer for a food facility. Operator was instructed to use the bleach instead.2. Operator was cleaning the surface of griddles with just a damp towel and no sanitizer. All food contact surfaces need to be cleaned with an approved sanitizer. Operator was concerned about bleach damage the non-stick.Please clean the griddles with a QUAT solution of 200ppm. Test strips are required to ensure the proper concentration.

- Scoopers were being stored in containers through the facility, specifically in the dough container and the flour container. Scoopers must be stored outside the containers to prevent contamination of food.Operator removed scooper from the container.

- Bowls were being used as scoopers in bulk containers. Scoopers need to have handles to prevent cross contamination with the food facility. Please replace the bowls with proper scoopers that have handles.

- Hand sink did not have paper towel nearby, instead it was on the other side of the room. Staff need to have paper towel easily accessible for hand washing.Please install a paper towel dispenser where pieces can be torn off without touching the paper towel roll.
