      • Multiple food items such as sauces and noodles that a facility operator indicated as for personal/staff use was observed stored along with food items and products for sale/service. Ensure there is separate storage for articles and food items not associated for food service to prevent cross contamination.

      • The paper towel dispenser in the women's washroom was observed to be empty.A facility operator refilled the dispenser during the inspection.Ensure that all hand washing stations are fully supplied with soap, paper towel, and hot and cold running water.

      • The dough mixer stand was observed with observed with a build-up of food debris, the bowl and attachments were observed to be clean. Facility operators indicated the mixer had been used earlier in the day and is cleaned after every use.Clean and sanitize the mixer stand. Ensure the equipment is maintained in a clean and sanitary condition to prevent cross contamination and attraction of pest.

      • Areas were observed to have an accumulation of food debris or grease.- the floor and walls under the dishwasher- the standing freezer storing mozzarella sticks, fries, and springrolls.- the floor and corners of the walk-in coolerEnsure that the areas mentioned above are maintained in a clean and sanitary condition.

      • A utensil, ice scoop, was stored in an insanitary manner with the handle touching the ice. Facility operator moved the utensil in a container. Ensure that all food is protected from contamination by storing scoops not touching the food items.

      • Personal items such as jackets and shoes were stored in the kitchen and on shelving storing food items. Designate an area for personal items must be stored separate from food items, preparation, handling, and storage areas.

      • The pest control records were unavailable to review during the inspection. There was no evidence of pest activity. Send a copy of the last three months of the pest control records via email. Ensure that the pest control records are available to view onsite.

      • The handles and gasket of the pizza prep cooler were observed with a build-up of grime and food debris. Clean and sanitize the above-mentioned areas.

      • Buckets of pork belly were stored on the floor of the walk-in freezer. Facility operator moved some buckets on a crate and on a counter for preparation.Ensure all food items are protected from contamination by storing them above the ground.

      • The back door weather stripping was in disrepair and exterior day light can be seen from inside. Repair or replace the weather stripping to ensure all exterior openings are sealed to prevent pest entry.

      • There was no sanitizer solution readily available during the inspection. Facility supervisor made a new quat sanitizer solution and the concentration was measured at 200ppm.Ensure sanitizer solution is available for surface sanitizing during food handling.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • High risk food items, including oyster sauce and creamy garlic sauce, requiring refrigeration after opening was left at room temperature. Facility operator moved the food items into a cooler. Ensure that all high risk food items are stored at appropriate temperatures, 4C or below.

      • Food equipment including the microwave and the stand-up cooler handles were observed with accumulated debris. Clean and sanitize the food equipment mentioned above. Highly recommended to increase the cleaning frequency.

      • A dented can of tomatoes was observed on a rear storage shelf. Staff discarded the can during the inspection. Ensure that dented cans are discarded and not used in the production of food.

      • Acoustic (absorbent) ceiling tiles were observed in the kitchen and dishwashing area.Replace with smooth, non-porous, easily cleanable tiles.Update Oct 05/2023: Operator has spoken with landlords concerning replacing ceiling tiles and will notify inspector when tiles are in place.

      • One of the acoustic ceiling tiles above the dishwashing area had been pulled off due to a leakage from the ceiling. There were water stains on the tile.Investigate source of leakage and ensure the required repair is completed. Replace with a smooth, cleanable ceiling tile.

      • There was dust on the intake air vent and ceiling tiles over the deep fryer in the kitchen.Clean ceiling area.
