      • Unfinished wood was used as a oven rack. Grease and residual build up was observed along the wood pieces and was unable to be cleaned. The wood was discarded upon request. The operator stated that all hot pans will be placed on the stainless steel counter for cooling instead.
    • 24. Is solid and liquid waste being managed in a suitable manner?
      • No garbage bin was observed behind the front counter or near the handsink in the front service area. A garbage bin was placed by the handsink and meat slicer upon request.
