- The high-temperature dishwasher was not operable at the time of the inspection. The inspector was informed that the dishwasher was unable to drain properly.Please repair the mechanical dishwasher to ensure it can drain and is sanitizing dishes by reaching temperatures of 71C or higher. The operator will be using single-use plates, cups, and utensils until the dishwasher is repaired. The three-step manual dishwashing method must be used for kitchen equipment used to prepare meals.
