- At the time of inspection no chlorine detected during the final rinse cycle for the bar glass washer.
- At the time of inspection quats santizer used in dining area and front service area well over 400ppm in concentration.

- All glasses and cups are to be rewashed in the kitchen high temperature dishwasher. All glasses and cups are to be washed in the kitchen high temperture dishwasher until the bar glass washer is serviced and in good working order.

- Observation: At the time of inspection high temperature dishwasher turned off with drain pipe disconnected. As per owner this is due to the installation of the new in ground grease trap. Plumber is currently sourcing adequate sized piping to re-attach the drain pipe in the next few hours.
- Corrective Action(s): Until the high temperature dishwasher is fully operational premise is not restricted to take out containers and single use utensils. Operator has setup the 2 compartment sink for manual warewashing with 100ppm available in the sanitize sink.
