      • Corrective Action(s): Fish was placed back in the fish cooler as operator indicated it had been less than 2 hours.
      • Operator was instructed to relocate all potentially hazardous foods from milk cooler and prep cooler to a cooler that is 4 C or below.

      • Plan is to wash dishes in dishwasher and immerse in sanitizing solution (bleach and water)
      • Ensure that chlorine levels are checked at least once per day.

      • Observation (CORRECTED DURING INSPECTION): Milkshake mixer is being cleaned with a cleaner /disinfectant that is not suitable for cleaning and sanitizing food equipment (read label and reviewed with operator - 10 minute contact time and requires a potable water rinse afterwards).
      • Corrective Action(s): Use a dishwashing detergent to wash all clean in place food equipment and food contact surfaces, rinse with plain water, sanitize using a sanitizer such as 1 tsp plain (unscented) domestic bleach in 1 litre of water (100-200ppm chlorine) and soak for 2 minutes or let air dry.
