- Observation: As discussed in previous inspections there are a healthy selection of rusted out shelves and/or shelving units in the walk-in cooler. Some of the better shelves used for produce and the worst for ready to eat or more hazardous foods.
- Corrective Action(s): Continue to rotate and replace as discussed with staff and owner previously.
- Don't forget to clean the wired shelves regularly as well.

- Observation (CORRECTED DURING INSPECTION): Meat deli cooler observed at 8 to 9 C. Checked again later in inspection at 6.5 to 7.5 C. Possible defrost cycle. Discussed with operator. New compressors and unit overhaul scheduled for February.
- Temp logs in place. Dating these sheets inconsisitent. Closely monitor this unit for temperatures and make sure it stays in proper range.
- Corrective Action(s): Make sure to date temp logs on daily basis.
- Make sure to monitor meat case closely and ensure foods stay at proper temps.
- Many of the ready to eat foods are put into unit frozen.
- Check up in February.

- Observation: Some secondary areas of premises in need of attention including:
- - shelves in walk-in cooler as discussed (build up of lint and food debris noted - mixed with rust)
- - floor in walk-in freezer in butcher dept., minor in walk-in cooler;
- - wall behind meat slicer (both meat slicer pretty clean)
- - nylon butcherboard in butcher area needs attention. Use bleach to bleach out staining.
- Corrective Action(s): Pay attention to these noted areas and clean up. Make sure staff are following good cleaning practices - audit work occassionally. Power wash storage shelves as discussed.

- Observation: 1.Ceilign drywall found to be broken or have holes in the sandwich preparation area. This may expose the food products or food utensils to contamination.
- 2. Box or raw chicken breasts found to be stored next to a box of kale in main walk-in cooler.
- Corrective Action(s): Repair or properly patch broken dry wall sections. In the mean time, do not store any food products or utenils underneath broken sections of the drywall ( Immediately).

- Observation (CORRECTED DURING INSPECTION): Internal temperature of whole cooked chickens in the hot case measured 54-55 degrees C.
- Corrective Action(s): Reheat all chickens to 74 C in the oven and then keep them hot (internal temperature of 60 C or higher).
- Chickens must be held at 60 or higher. Adjust the thermostat on the hot case so that it is capable of maintaining them at 60 C or higher at all times. (immediately)

- Observation: Food debris build up noticed along the edges of the deli cooler and floor and along the North wall and floor. Debris also observed in electrical conduit opening underneath the sandwich cooler.
- Corrective Action(s): Remove all food debris and food crumbs etc. from the floor edges and cover or seal all floor wall junctions and space between deli cooler and the wall. Clean the floor drain located in front of the ice maker. Cleam floor thoroughly in the produce wash area especially underneath the produce sink and around the ice maker (By July 16, 2017).
