- The proofing units were recently renovated leaving a portion of the sub-floor (concrete) exposed. This part of the floor had water pooling from the steam within the proofer. Concrete is pourous and not easy to clean. Floor repair is scheduled for this year.*** Please ensure that the floor is repaired as soon as possible to ensure it is smooth, non-porous and easy to clean. I have set a date of 31May2026. If you feel this is not achievable, please contact me to discuss.Until such time as the floor can be repair, diligent attention to maintaining the area free of water and cleaning of this area is necessary. ***

- Continues: Daylight was observed at the bottom of the back door. This can allow the entry of pests.The operator confirmed that the gap will be repaired once all renovations are completed.Pest control reports from Orkin were also available onsite for review.

As of April 2nd, 2025, this violation remains, as repairs have not yet been completed.Please ensure floors, walls, and ceilings are repaired so as to be smooth, non-porous and easily cleanable.

As of April 2nd, 2025, this violation remains.Please ensure the food preparation areas are maintained in a sanitary condition. Please also ensure a cleaning schedule is implemented and followed on a regular basis.
