      • Observation (CORRECTED DURING INSPECTION): 1) Multiple foods found to be uncovered in the prep cooler THIS IS A REPEAT VIOLATIONS
      • 2) Knives were observed to be kept in crevices
      • Corrective Action(s): 1) Ensure food is covered at all times to protect the food from contamination. Food were covered at the time of inspection
      • 2) Do not keep knives in crevices as it cannot be maintained in a sanitary condition. Knives were relocated at the time of inspection.

      • Observation: Hole in the wall found underneath the low temp dishwasher. Droppings observed both behind the wall and infront of the wall.

Discussed with operator: potentially hazardous foods must NOT be stored in prep cooler for longer than 2 hours unless temperature maintained at less than or equal to 4 degrees Celsius. Operator called service technician.

      • Observation (CORRECTED DURING INSPECTION): Black mould observed inside the ice machine inner components. Directed staff to clean the machine. The ice machine must be cleaned and sanitized entirely at least every 2-3 months. To clean and sanitize: 1. Turn off the machine 2. Discard all ice 3. Wash with warm soapy water 3. Rinse 4. Sanitize 5. Air dry

      • Corrective Action(s): Repair the dishwasher so that it dispenses 50ppm chlorine during the final rinse cycle.
