      • Observation: No chlorine detected in the final rinse cycle of the dishwasher.
      • Corrective Action(s): Repair or adjust the dishwasher so that it dispenses chlorine sanitizer at 50-100 ppm at the plate surface (Immediately).
      • In the meantime, all dishes must be sanitized manually in 200 ppm chlorine bleach sanitizer.

      • Observation (CORRECTED DURING INSPECTION): An insert of raw chicken was stored next to an insert of cooked chicken. The raw chicken insert was covered.
      • Corrective Action(s): As previously discussed, cooked chicken should be stored above raw chicken, or at a minimum the cooked chicken insert should be covered to prevent any accidental dripping from raw chicken juices.

      • Observation (CORRECTED DURING INSPECTION): Uncovered inserts of raw chicken stored directly next to cooked chicken in drawer coolers under flat-top grill.
      • Corrective Action(s): Minimize potential for contamination of cooked chicken by placing both inserts of cooked chicken in the top drawer, and both inserts of raw chicken in the bottom drawer. When reheating the cooked chicken, ensure internal temperature reaches at least 74C.
