      • Observation (CORRECTED DURING INSPECTION): Hot holding units on the back counter at 42C, product had just been placed in them after being heated in the microwave. Temperature was not checked and therefore they were not heated to 71C before placing in the hot holding unit.
      • Corrective Action(s): Product was removed from the hot holding units, reheated in the microwave and was at >71C when placed in the hot holding unit
