- Observation (CORRECTED DURING INSPECTION): Facility has switched from a Quats food grade santiizer to a product called "Chimisol Degreaser Sanitizer". This product was connected to Quats dispenser and being used for dishwashing and surface sanitizing.
- The bottle for "Chimisol Degreaser Santizer" states 'All surfaces in direct contact with food must be rinsed thoroughly with potable water befor reuse.
- Corrective Action(s): Chimisol Degreaser Sanitizer is not approved for surface sanitizing or sanitizing dishes. Remove it from the facility and have the lines for the dispenser replaced/cleaned so this chemical is no longer in the lines.
- Noroquat found in cupboard. Ensure this is used for surface sanitizing going forward, remove the Chimisol product from facility.
- A back up product would be bleach in case the supplier is out.

- Observation (CORRECTED DURING INSPECTION): Back fridge at 10C air temperature with the doors propped open. Expaination was that the buckets of Acai Sorbet defrosting will cause the fruit in the fridge to freeze. This is improper practice, as it allows the food in the fridge to rise above 4C. Oak milk temperature measured and found to be at 4C after fridge was closed and allowed to cooler back down with time
- Corrective Action(s): Two options are recommended instead of propping the fridge door open
- 1) moving all fruit to the front cooler
- 2) Purcashing a separate cooler for fruit or for defrosting
- Advised staff to stop propping the door open as the fridge temperature is rising too much and risking food safety
