- Cooked chicken was observed to be stored on top of vegetables and sauces. The chicken was moved to be stored at the bottom of the shelves. Ensure meat products are stored at the bottom shelves to prevent cross contamination.

- The exhaust ventilation system was due for cleaning in July 2023. Contact a service professional to shedule a cleaning of the exhaust ventilation system.

- Grease build up was observed on the exhaust canopy filters. Some grease and food debris was observed on the floor underneath the cookline of woks. Clean the above mentioned areas.

- Cooler temperatures are 4C or colder. Thermometer provided in walk-in cooler, but not in front prep cooler. *Thermometer provided for front prep cooler during inspection. Please ensure all cooler units are provided with a thermometer to easily verify temperature of units throughout the day.*Obtain a probe thermometer for verifying the hot-holding temperature of the rice.

- Chlorine test strips are available to verify the concentration. These test strips are recently expired. QUAT test strips are required to verify the concentration of the food contact surface sanitizer.
