      • Observation: Wiping cloths - too many cloths noted on site. Cloths not being stored in a sanitizer solution. Cloths are being used to line food prep surfaces/prep storage lines. Chemical spray bottles not properly labelled.
      • Corrective Action(s): Wiping cloths used on food contact surfaces must be kept stored in a sanitizer at all times. Limit the number of cloths being used. Cloths are not to be used to line prep surfaces/storage bins. All spray bottles are to be kept clearly labelled.

      • Observation: Sauces being held/stored at room temperature. (ie: Teriyaki) Sauces not labelled.
      • Corrective Action(s): Manufacturers specifications clearly state "Refrigerate after opening". Staff state they are trained to leave at room temperature. Corporate policies and procedures are required to be reviewed. Copy to be provided to my attention. Label all sauce bottles.

      • Observation: Facility/shelving unorganized. Items being stored on floors.
      • Corrective Action(s): Clean and organize facility - prep/storage area. Store all items off of floors. It may be beneficial to provide extra shelving.
