      • Observation: Mouse activity still notable. Some access points have been eaten through or worked around. Some traps and bait stations not set properly or have been disturbed by staff cleaning activities. Areas of activity are as noted:
      • - Behind washing machine;
      • - Below prep and triple sinks in kitchen;
      • - below prep line;
      • - in storage room/uniform room;
      • - bar at cash registers and bottom beverage syrup shelf;
      • Corrective Action(s): PCO visit tomorrow. Review with them methods to improve blockage to entry points. COntinue to block entry points as discussed.

      • Observation: Flies continue to be problematic at the dishpit area. Bottom of garbage bin, and floor in area has sludgy organic matt persisting. Underside of dishpit station, especially where plates are scraped into garbage has moderate amount of food debris build up noted. These are all opportunistic food and potentially breeding environments.
      • Secondary areas of concern include: Right side of pasta boilers and cavity opening to grill line. Significant build up of food-related debris. Area below and around prep sinks.
      • Corrective Action(s): Complete cleaning of underside of above stations needed. Focus on seems and connection points in stainless steel and areas where water visibly sits for extended time. Keep floor dry and/or free of multiple-day build up to reduce breeding opportunities.
      • **Suggest spraying floor with wash and walk (spray bottle) in key build-up areas in between weekly cleanings.

      • Corrective Action(s): Unit needs to be completely cleaned and areas of potential contamination removed.

      • Observation: Most of the kitchen area is free of fruit/drain flies, BUT there is a significant concentration of adults observed under the dishwasher counter and around the various bins (garbage, organics, and used saucers). The bins themselves may be contributing to brreding opportuinties. Floor in this immediate area caked with organic mat and stagnant water. Under side of dish station counter dirty. These may constitute significant breeding opportunities.
      • Corrective Action(s): A) Make sure all parts of the dish pit are properly cleaned on a daily basis. High traffic and/or heavily soiled parts of this station identified above requires extra attention. Waste bins must be cleaned daily inside and out (Add small amount of bleach directly to the inside of cleaned waste bins to deter fly activity).
      • B) Place a pan or bowl of vinegar and liquid soap mixture (make sure there is enough soap added to form and hold bubbles to capture adult fruit flies - use nozzle sprayer to maximize bubbles) in general area of concentrated fly activity.
      • C) Discuss issue with Pest Control. Have them provide advice and possibly added adult traps for key harbourage areas as discussed.
      • Follow up inspection date noted on report.

      • Observation: Most of the kitchen area is surprisingly free of drain/fruit flies, EXCEPT the area around the double prep sinks. Significant localized activity and harbourage in and around shop vac.
      • Corrective Action(s): The following actions should be taken to eliminate this problem:
      • - Re-locate shop vac to chemical room or to outside;
      • - Daily end-of-day cleaning is needed for shop vac, and the inner collection chamber should be left with a spraydown of detergent or sanitizer to deter fruit fly breeding;
      • - This area needs daily added end-of-day attention (shelves and floor) until breeding cycle broken;
      • - Vaccum up flies and bait the area as discussed until pest activity controlled.
