      • The grease trap is currently being replaced. The back kitchen area has been isolated and is not in use during this process.To ensure food safety, please ensure that no food preparation or service occurs while the grease trap replacement is underway.Please notify when major renovation occur that may impact safe food service.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • -The mop sink is observed to be unclean and has missing grout. Please clean and sanitize the area thoroughly and repair/replace the missing grout to ensure a safe and sanitary condition of the facility.-Grease and grime have been observed at multiple locations throughout the food handling area. A comprehensive cleaning and sanitizing of all affected areas is required to maintain proper hygiene and ensure food safety.
    • 24. Is solid and liquid waste being managed in a suitable manner?
      • Semisolid food waste is currently being collected in a pail and stored in the back kitchen area near the mop sink for disposal at the end of the day.Please discontinue this practice. All food waste must be disposed of promptly and in a hygienic manner, ideally within 2 hours of generation, to minimize the risk of contamination, odours, and pest attraction, and to maintain food safety standards.Please review and amend your cleaning schedule to ensure timely and effective waste disposal practices are consistently followed.

      • The prep-cooler in the front was >4C during the inspection. Please ensure the temperature is at or below 4C at all times. Food items moved to a working cooler. Please monitor and call for service should require. * Do not store any potentially high-risk food in the cooler until it is in good repair and working.
