- One of the surface sanitizer bottles had no active sanitizer in it when tested. - Bottle was dumped during the inspection.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Did not have a probe thermometer to check internal temperatures of meats. - Operator was able to get one during the inspection.
- 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
- No test strips for the "sink and surface" sanitizer that was used were available. - Operator was able to go out and get them during the inspection.
- 20. Is the facility maintained in a clean and sanitary condition?
- Trailer with coolers and freezers is dirty and there were many items not associated with food preparation in this area. - Clean and organize the trailer for next year's event.

- Hot holding unit and prep table in the back were not covered with any tent or roof. All food handling should be done in a covered are to prevent contamination. - Next year make sure all food handling is done in a covered area.
