    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Multiple damp cleaning cloths were observed on a food preparation counter adjacent to the walk-in cooler. Staff immediately removed those clothes from the food preparation area.Ensure used cleaning cloths are stored submerged in a sanitizer solution in between uses or moved into the laundry basket immediately after use to prevent cross contamination.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Fridge thermometer was not available in the walk-in cooler (unit#22). The onsite staff placed a thermometer in the walk-in cooler during the inspection.Ensure thermometers are available in all the cooler units.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • A visible gap was observed in the back exterior door, creating an access point for pest intrusion. Due to damage to the middle section of the door and a broken part of the weatherstripping. The manager indicated that a work order had been created to resolve the issue, and they are awaiting their maintenance team to complete the required repairs.Repair exterior door and replace the missing weather stripping to prevent pest from entering the food premises.

      • Three cartons of milk products in the walk-in cooler were past their best before dates.Milk products were discarded.Ensure products received are regularly inspected for best before and expiry dates.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The hot water faucet in the grill section hand sink was steadily leaking when turned on.Repair faucet.

    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The paper towel dispenser in the prep line hand sink was not functioning properly. Paper towel was not being dispensed. Food handler indicated that the battery might be depleted.Replace the battery for the dispenser and ensure there is paper towel at this sink.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • There was ice build-up around the floors, ceiling and fan guards of the walk-in freezer.- Remove ice build-up and investigate the source of condensation. Repair the issue.

      • Food debris was collecting around the hard-to-reach corners of the walk-in cooler and floors surfaces.- Clean and sanitize surfaces of these food equipment. Ensure that they are regularly cleaned and sanitized to prevent debris build-up.Cardboard box was used on the floor of the walk-in freezer to prevent slip and falls. - All surfaces around the food storage area must be smooth, non-porous and cleanable. Remove cardboard box and replace with a cleanable, durable, impermeable, non-slip mat.

      • The following areas around the facility were found insanitary and require deep cleaning:- floors under the prep-line cooler opposite the grill had accumulation of debris.- floor area in the drinks walk-in cooler and around the barrels.- floor around the employee shoe rack by the back door- floor space around the oil storage box.- corners and edges of the floors around the food prep, server and back door area.Clean and sanitize the above-mentioned areas thoroughly.
