- Observation (CORRECTED DURING INSPECTION): Hot holding unit for the roasted chicken unable to hold >60C. Chicken was probed to have a temperature of 50.6C.
- Corrective Action(s): Ensure all hot potentially hazardous food items are displayed above 60C. Operator indicated that the unit does not have a temperature log. Chicken are usually held for 4 hours before being pulled to cool down and used in other items. Operator placed the chicken in the unit less than 1 hour ago. Operator turned up the dial and the chicken reached >60C. Ensure there is a monitoring system in place for the hot holding unit and chicken are not stored in between a temperature of 20-60C for more than 2 hours.
