    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • There were utensils stored in a quats sanitizer solution and the concentration measured 150ppm. The concentration of the quats sanitizer solution must be maintained at 200ppm to effectively remove contamination. Ensure the sanitizer solution is regularly tested. If the solution is heavily soiled, replace the sanitizer as food debris can decrease the concentration. The operator replaced the sanitizer solution during the inspection and measured 200ppm.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • There was food thawing in the designated hand sink. The hand sink must be readily available at all times to perform hand hygiene. Refrain from using the hand sink for tasks other than performing hand hygiene. The operator removed the food from the hand sink during the inspection.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The exterior of the bulk containers are soiled with grime and food debris. Food containers must be maintained in a clean and sanitary manner to prevent cross contamination of food. Regularly clean the exterior of food containers or whenever they become heavily soiled, whichever comes first.
