- The QUAT sanitizer that was available in the kitchen's spray bottle at the time of the inspection was unsatisfactory.The sanitizer solution was mixed to a concentration approximately 8X stronger than outlined in the manufacturer's instructions for use.The solution was diluted at the time of the inspection to be approximately 200 ppm.Ensure that sanitizer solutions are mixed according to their manufacturer's specifications.

- At the time of the inspection, the kitchen's mixed QUAT food surface sanitizer was being stored in a re-used Oxivir TB spray bottle. The old label is misleading to the contents of the spray bottle.Additionally, chemical containers that were previously used for the storage of a substance should not be used for the storage of other chemicals as this may lead to unintended chemical reactions.Ensure that a new spray bottle is used for the QUAT food surface sanitizer and that the new bottle is adequately labelled to identify the correct chemical it contains.

- No QUAT sanitizer test strips were available at the time of the inspection to confirm the concentration of the facility's mixed QUAT sanitizer solution.Ensure that the kitchen is supplied with test strips that are designed for the chosen sanitizer to confirm that sanitizer solutions are mixed and maintained at acceptable concentrations.
