      • Observation: Automatic quat dispensing mechanism at the 3 compartment sink is not dispensing the correct amount of quat sanitizer. Sanitizer dispensed tested at approx. 100ppm. Must be a minimum of 200ppm
      • Corrective Action(s): Until technician has come in to repair the unit , add concenttrated quat sanitizer to the sanitizing sink by hand. Use the quat test strips to verify that a minimum of 200ppm quat is present.
      • Premises is to resanitize all utensils.

      • Observation (CORRECTED DURING INSPECTION): Pizza prep cooler not working. Tray inserts cannot be stored even temporarily for a short period of time on the top side. All PHF's must be stored at refrigerated temperatures at all times
      • Corrective Action(s): All PHF's were relocated to the walk in cooler. Manager stated technican will have unit repaired before 4:00pm today.
