- Back door of kitchen was open at time of inspection, operator indicated that a mesh screen door will be installed at the end of the month.
- Keep door shut to prevent pest entry during food preparation. Comments Routine inspection conducted. Hand wash stations fully supplied with soap, paper towel, hot and cold water. Coolers at 4°C or less and freezers at -18°C or less. Daily temperature log maintained. Record dishwasher chlorine sanitizer concentration in ppm. Dishwasher sanitizing at 50 ppm, quat sanitizer at 200 ppm. Storage unit is clean, but rubber seal at the base of unit observed with gaps underneath. Replace door sweep so the door is sealed completely when shut. No signs of pest activity observed, routine pest control in place. Bathrooms are clean and hand wash stations adequately supplied. Facility is overall clean and well maintained.
