    • 206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): Container of boba pearls stored uncovered at ambient temperature. Operator stated it was prepared for the lunch rush and stored under 2 hours.
      • Corrective Action(s): Operator transferred boba peals to cooler during inspection. You may store pearls at/above 60C or at/below 4C or time track to store at ambient temperature for less than 2 hours, then discard.

      • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): Bucket of chlorine sanitizer at front of house measured below 10 ppm.
      • Corrective Action(s): Operator refreshed the bucket with 200 ppm chlorine solution. Cloth was stored in solution. Ensure sanitizer concentration is monitored regularly.

      • 401 - Adequate handwashing stations not available for employees [s. 21(4)]
      • Observation (CORRECTED DURING INSPECTION): 1. Front hand sink being used for ware washing of cups and obstructed by drying rack.
      • 2. Hand sink by prep sink not properly equipped with hand soap.
      • Corrective Action(s): 1. Operator removed warewashing rack during inspection. Please do not use the hand washing station for other purposes.
      • 2. Staff refilled the soap dispenser during inspection.

      • 402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
      • Observation (CORRECTED DURING INSPECTION): Improper hand hygiene/glove use of food handlers observed.
      • Corrective Action(s): Gloves must be changed between tasks and must not be reused. Hands must be washed before and after wearing gloves. Hands must be washed with liquid soap and warm running water at the hand washing station and dried with single use paper towels.

    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation (CORRECTED DURING INSPECTION): 1. Containers of food in coolers and freezers not covered during storage. Double stacking of container on top of raw meat also observed.
      • 2. Cooked beef/bone for broth stored in chest freezer with ice build-up with no container or wrapping. Operator stated they were prepared and stored 1-2 days prior. No other foods stored in unit at time of inspection.
      • Corrective Action(s): 1. Staff covered all stored foods during inspection. Operator voluntarily discarded double stacked meat and changed the containers that were contaminated.
      • 2. Staff transferred all cooked beef/bone to another freezer in containers and emptied the chest freezer to be defrosted, cleaned and sanitized. All cooked beef/bone will be retransferred to chest freezer in containers/bags.
