Manager has stated that a work order is in place to replace the unit. However, is unsure when the new unit will arrive. The cooler was able to maintain 4 deg C on one side of the cooler unit (right side). The left side was registering ambient temperatures of 9-10 deg C.
- Corrective Action(s): - Ensure that the entire cooler unit can maintain temperatures of 4 deg C or lower.
- - Do not store any cold potentially hazardous food items in the bottom portion of the cooler unit until it can maintain 4 deg C or lower.
- - Only store maximum 2 hour supply of cold potentially hazardous food items in prep inserts.
- - Any remaining cold potentially hazardous food items in prep inserts must be discarded.
