- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- Three spray bottles of chlorine sanitizer were attempted to be tested, and were incapable of being sprayed. When opened, the solution was >1000 ppm. Facility has been cited for this in the past, and extended periods with concentrations this high in spray bottles can eat away at the plastic and cause them not to function. Solutions must be made to an appropriate, food safe concentration of approximately 100 ppm. As the spray bottles could not function, a bucket was used to make a 100 ppm chlorine solution.

- Chlorine test strips had visible water damage and no verifiable expiration date. They must be replaced.
- 23. Is the facility maintained in a clean and sanitary condition?
- Cleaning is required for floors, with special attention to corners and underneath prep tables. Smaller of the two deep freezers requires cleaning on the lid surface. Standing cooler that is not in use requires organization and removal of items not needed.
