      • Corrective Action(s): Ensure all equipment is properly washed and sanitized to remove all food debris after use. Unit has not been used for a long while, therefore ensure it is sanitized before next use.

      • Corrective Action(s): A thorough cleaning is required of all high touch points such as cooler doors, ovens, etc. Fans in the walk in refrigeration units also need to be cleaned to prevent dust and mildew from falling on food.
