    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Two wet cleaning cloths were observed sitting on the kitchen countertops. Requested operator place cloths into the sanitizer pail solution. Please ensure wet cloths used on kitchen surfaces are stored in a sanitizer solution.
    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The measured concentration of the QUAT sanitizer solution in the spray bottles for the pizza and chicken station were 0ppm. Informed operator to refill spray bottles with new sanitizer solution. The retested concentration was acceptable (200ppm). Please ensure sanitizer solutions are routinely tested to ensure an acceptable concentration is maintained.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • June 16, 2026 - The onsite QUAT test strips were missing the colour indicator and corresponding printed expiry date. Please ensure new valid QUAT test strips are ordered and available onsite. Quat test strip was observed to have expired since Jan 2025. Please replace the expired test strip to ensure sanitizer concentration is measured appropriately.

    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • A container of flour opposite the walk-in- cooler was observed to have a scoop in the flour. Corrective Action: Operator was educated on the danger of having scoops inside food ingredients and was instructed to remove the scoop from the container and all other containers that had scoops in them.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Quat test strip was observed to have expired since Jan 2025. Please replace the expired test strip to ensure sanitizer concentration is measured appropriately.

      • The pink wiping cloth was sitting on the counter of the chicken wing prep cooler. Wiping cloths must be stored in sanitizing solution in between uses in order to prevent the growth of bacteria on the cloth.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The interior of the black wooden bin used to store pizza pans at the front of the store is in disrepair- the interior surface is no longer smooth, impervious to moisture and easy to clean. Interior surface requires refinishing to ensure that it is smooth, impervious to moisture, in good repair and easy to clean.
