      • Rice food preparation was observed being conducted in a container placed on a stainless steel tray that was mounted on top of an open garbage bin container. Requested operator move container onto an appropriate food contact work surface.
    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • A bag of whole onions was observed on the kitchen floor. Informed operator who placed bag off the ground. Please ensure food products are not placed directly on the floor.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • A bag of frozen meat on the stainless steel service cart was being thawed at room temperature. Requested operator place product into the walk in cooler to properly thaw. Please ensure frozen products are properly thawed either in a walk in cooler, under cold running water, or the use of a microwave.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • No chlorine test strips were available onsite to measure the concentration of the sanitizer solution.

      • Pest control records were not up to date. Please ensure documentation is completed on a routine frequency and available for review.
