      • There's a gap under the back door where light shines through.*Install weather strip to eliminate gap under the door to prevent entry of pests.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • A few areas of shelves were dusty and greasy and covered in plastic, including the shelf above the fryer racks, the shelf above the pizza cooler, and the wire rack where pizza pans are stored. A couple laminated record sheets placed with magnets near food handling areas are dirty. There are garbage bags pinned up against the wall in the dough prep area. Plastic liners do not allow for proper cleaning.*Remove plastic from wall and shelves. Clean and sanitize dust and grease on shelves and wire racks.

      • A need to clean the restaurant was noted. The front order desk is not clean and patrons can readily see the area. The pizza cutting area wall has plastic wrap on the wall. Another area has tin foil on the wall. The wall material is FRP and is readily cleanable. Remove the wrap and tin foil and clean the wall.The water cooler stand is not clean.Detailed cleaning is needed throughout the restaurant. The oven is not clean.Scheduled cleaning of the exhaust hood and grease trap were discussed.
