      • -The prep metal cooler's temperature was measured at 14.2 degrees Celsius. The food items in the cooler were shredded chicken and chicken pieces (the probed temperature was 9.2 C) and mayonnaise (8.8 C). The food items had a time stamp, and they were under the 2-hour time limit.* Removed food items, asked the staff to store them in the working refrigerator and to mark the cooler as out of order and do not use.
