      • High risk foods and leftover foods are not dated.Ensure all high risk foods and leftover foods are dated for racking purposes.

      • Prep cooler and under the counter juice cooler was not equipped with a thermometer.Ensure all refrigeration units are equipped with a thermometer to monitor temperature.

      • High temperature dishwasher: temperature of final rinse water at the dish did not reach 71 Deg C or hotter. Temperature detected was 66.6, 68.8, 69.6 & 69.8 Deg C. Final rinse water temperature gauge is also not working.Ensure dishwasher is repaired and final rinse water is at 71 Deg C or hotter at the dish. Gauge must be repaired as well.Until such time that the dishwasher washer is repaired, manually sanitize (200 ppm QUAT sanitizer) all dishware after washing or use the dishwasher located in Building C kitchen.

      • Hand washing sink near the dry storage area was blocked by a fan and other dry goods. Ensure hand washing sink is never blocked and always accessible for hand washing purposes.

      • Paper towel dispenser in the service area (above the ice machine) just outside kitchen is broken.Ensure paper towel dispenser is either repaired or replaced.

      • Hand washing sink next to the steam table: paper towel dispenser was empty. Ensure all hand washing sinks are adequately supplied with liquid soap and single use paper towels. Refill the dispensers immediately when they are empty.

      • Coffee filters are stored in an improper manner (on top of the coffee machine). Ensure coffee filters are stored in a food grade container with a lid.
