Left unchecked, crumbs create a breeding ground for infestations.2. Loose crumbs left in a warm, humid bakery environments readily absorb ambient moisture. This leads to mold growth and can harbor bacterial pathogens 3. Crumbs from breads containing sesame, nuts, soy, or dairy can lead to severe allergen cross-contamination.4. Accumulated crumbs from older production cycles can get swept or blown back into fresh batches of dough or batter, compromising product quality and violating hygiene codes.Correction:-By May 29, 2026, ensure that the facility is deep cleaned and maintained in a clean, sanitary condition.-Deep cleaning once a week is not adequate.-Implement a routine, frequent cleaning schedule to accommodate the volume of production.
