      • The Quat sanitizing solutions in two buckets were noted at a concentration of 50ppm.Operator got new sanitizing solutions that was 200ppm concentration.Ensure that Quat sanitizing solution are at adequate concentration of 200ppm.

      • A used cleaning cloth was noted in the front area.Operator removed the used cleaning cloth.Ensure that cleaning cloths are soaked in sanitizing solution in between use.

      • Two rubber spatulas were noted in disrepair.Operator discarded spatula.Ensure all utensils are in a good condition at all times.

      • Quats test strips were not available- ensure to obtain test strips for verifying sanitizer concentration
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Liquid soap dispenser at the back room hand washing sink is not operational- ensure liquid soap dispenser is repaired and/or obtain a bottle pump dispenser

      • Several cleaning cloths were noted not in sanitizer buckets. - ensure that cloths used for cleaning are always being stored in sanitizer buckets.

      • Frozen gluten-free crust was being stored without packaging in the freezer below bags of frozen ground beef and was tossed out during inspection.- ensure food is stored in a manner that protects it from contamination.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Food stored above prep line cooler was measured at 10 degrees Celsius. Instructed operator to close prep line lid during slow hours to ensure food is maingtained at 4 degrees Celsius or below.

      • Temperature thermometers were not available in the prep line coolers.- please ensure coolers are equipped with functional thermometers.
